The Grand Paradiso and the Monte Rosa are perhaps the most famous ski tours in Italy and rightly so. They take in some impressive landscape and the seriousness of the terrain in places makes justifiably sought after routes.
There are other ski touring options though in Italy, many of which will see fewer crowds. The Dolomites are an excellent destination with a good variety of short and long routes, often taking advantage of lifts. It tends to be quieter than the central alps and this for most ski tourers is a real bonus.
The huts in Italy tend to be well equipped and friendly places to stay. They are all part of the Italian Alpine Club or Club Alpino Italiano.
CAI has an excellent web site that allows you to locate different huts based on region and it then provides information for each one. For many there are also photos, but prices and facilities are given.
Ski touring in Italy can be a bit cheaper than other places like Switzerland and France but the ski tours are just as good.

Club Alpino Italiano offer international membership. It grants you reciprocal rights in all European alpine huts and covers emergency rescue cover. Worth looking into if you are going to be in Italy for the whole time.
